Baked Salmon with Garlic & Dijon Mustard
Ingredients:
- 500g salmon fillet
- 2 Tbsp fresh parsley, chopped
- 2 Tbsp olive oil
- 2 Tbsp fresh lemon juice
- 3 garlic cloves, pressed
- 1/2 Tbsp Dijon mustard
- 1/2 tsp salt
- 1/8 tsp black pepper
- 1/2 lemon, sliced into 4 rings

Prep Time: 5 minutes
Cook Time: 15 minutes
Instructions:
- Step 1: Preheat oven to 210°C. Line a baking sheet with foil and brush with oil to prevent sticking.
- Step 2: Slice salmon into 4 portions and arrange on the baking sheet, skin side down.
- Step 3: In a small bowl, combine parsley, garlic, olive oil, lemon juice, Dijon mustard, salt, and pepper.
- Step 4: Spread the marinade generously over the top and sides of the salmon, then top each piece with a lemon slice.
- Step 5: Bake at 210°C for 12-15 minutes, until cooked through and flaky. Avoid overcooking.
