Salmon Tartare on Bruschetta

Salmon Tartare on Bruschetta

Ingredients:

  • 200g piece salmon
  • 1 small red onion (100g), chopped finely
  • 4 medium tomatoes (760g), seeded, chopped finely
  • 1 medium avocado (250g), chopped finely
  • 2 tablespoons finely chopped fresh dill
  • 1/4 cup extra virgin olive oil (60ml)
  • 1 long French bread stick
  • 2 tablespoons olive oil

Servings: 8

Prep Time: 20 minutes

Cook Time: 5 minutes

Instructions:

  • Prepare the Salmon: Remove and discard any skin or bones from the fish. On a clean cutting board, chop the fish finely with a sharp heavy knife.
  • Combine Ingredients: Place the fish in a medium bowl with onion, tomato, avocado, dill, and extra virgin olive oil. Mix gently to combine. Cover and refrigerate briefly while making the bruschetta.
  • Prepare the Bruschetta: Cut the bread into 1cm slices, and brush each slice on both sides with olive oil. Toast both sides.
  • Assemble: Spoon the tartare mixture onto the toasted bruschetta to serve.

Per Serve: 18g fat; 1095kJ

Tip: Bruschetta can be made one hour ahead. Cool, then store in an airtight container.
