Salmon Tartare on Bruschetta
Ingredients:
- 200g piece salmon
- 1 small red onion (100g), chopped finely
- 4 medium tomatoes (760g), seeded, chopped finely
- 1 medium avocado (250g), chopped finely
- 2 tablespoons finely chopped fresh dill
- 1/4 cup extra virgin olive oil (60ml)
- 1 long French bread stick
- 2 tablespoons olive oil

Prep Time: 20 minutes
Cook Time: 5 minutes
Instructions:
- Prepare the Salmon: Remove and discard any skin or bones from the fish. On a clean cutting board, chop the fish finely with a sharp heavy knife.
- Combine Ingredients: Place the fish in a medium bowl with onion, tomato, avocado, dill, and extra virgin olive oil. Mix gently to combine. Cover and refrigerate briefly while making the bruschetta.
- Prepare the Bruschetta: Cut the bread into 1cm slices, and brush each slice on both sides with olive oil. Toast both sides.
- Assemble: Spoon the tartare mixture onto the toasted bruschetta to serve.

Tip: Bruschetta can be made one hour ahead. Cool, then store in an airtight container.
